Description | Curcumin is a yellow pigment extracted from the rhizome of turmeric. It is the most important curcuminoid substance, accounting for about 70% of curcumin and about 3% ~ 6% of turmeric. Curcumin is often sold as herbal supplements, cosmetic ingredients, food seasonings and edible pigments. In addition to curcumin, this kind of compounds also include Demethoxycurcumin (10 ~ 20%), Demethoxycurcumin (10%) and hexahydro curcumin. Chemically speaking, curcumin is diarylheptanoic acid, belonging to curcumin compounds and natural phenols that cause turmeric yellow. It is an tautomeric compound, which exists in the form of enol in organic solvent and ketone in water. |
